After celebrating 20 years of El Gaucho Hospitality in 2016, we announced our partnership with Chef Jason Wilson, adding his three properties under our new Fire & Vine Hospitality umbrella last year. We spent 2017 defining what that looks like for our team, and creating the vision for what we want our guests to experience at each of our locations. Now that the groundwork has been set, we have the ability and confidence to seek new challenges.

We are excited to let you know about some of the new projects set to open this spring and summer, well as updates to our existing properties.

Eritage, Walla Walla
Opening in May, 2018, Eritage resort and restaurant is a tribute to the history, beauty and warmth of Washington’s farms and vineyards. Beautifully located on 300 acres in the rolling fields of wheat and vineyards of Washington wine country, Eritage is only minutes from downtown Walla Walla and its regional airport. Each of the ten luxury suites opens to a patio or deck with expansive views of the Blue Mountains, rolling farmland and a pristine man-made lake. Ten lakefront villas will open later in 2018. Chef Jason Wilson has created the menu to reflect the area’s history and honor the farmers and providers of locally grown ingredients. We will be taking reservations soon – please check our website.

Walla Walla Steak Co. and Crossbuck Brewing, Walla Walla
El Gaucho founder Paul Mackay, “retired” to Walla Walla a few years ago and recently purchased the iconic train depot building there to transform it into a restaurant and brewery. Walla Walla Steak Co. and Crossbuck Brewing are set to open in spring 2018.

Mackay is partnering with Dan Thiessen, who most recently served as Executive Director of the Wine Country Culinary Institute at Walla Walla Community College, and earned accolades as chef at many well-known Seattle restaurants. He will serve as managing partner while Steven Brack will head up the brewery side. Brack has been an award winning brewer with the Ram Restaurant & Brewery, Elliott Bay Brewery and Pacific Brewing and Malting Co, among others.

Walla Walla Steak Co. will be a warm and authentic hometown steakhouse featuring updated steakhouse classics with local, seasonal produce. The restaurant and bar will be open for dinner and feature an extensive local wine list, creative craft cocktails and Crossbuck beers.

Crossbuck Brewing guests will enjoy a front row seat to the entire brewing process where craft beers are tapped directly from the tanks in view. A strong barrel-aged program rounds out the range brewed with local hops and barley. Crossbuck will offer innovative tasty beers and some adventurous collaborations with area wine and spirits makers.

Pike Place Market, Seattle
Located at 2001 Western Avenue, this new project will benefit from the Pike Place Market expansion and waterfront access, enabled by the removal of the Seattle viaduct. Construction is scheduled to begin in June 2018 with an opening date in late summer. Guests will enjoy sweeping views of Elliott Bay. Connections with Seattle’s Pike Place Market vendors and local farming partners will serve as inspiration for our newest restaurant concept.

Fall City Farms and Sound Sustainable Farms
The Fire & Vine Hospitality sourcing philosophy has always been based on serving the very best ingredients, with local and organic produce at the top of that list. In 2017, we celebrated our first harvest with Sound Sustainable Farms, and we will build on that program with a partnership with Fall City Farms. Our culinary team has worked with both farms to plant a variety of fruits and vegetables for each of the company’s Western Washington-based restaurants. Eritage, Crossbuck Brewing and Walla Walla Steak Co. will work with Walla Walla-based farmers and ranchers.

The Inn at El Gaucho Renovation
Located above El Gaucho Seattle, the 17 rooms at the Inn at El Gaucho have begun an extensive renovation. The architecture and design firm, Skidmore Janette, created a luxurious design scheme which nods to the “retro-swank” history of the property with an elevated and modern touch. The project began this month and will be completed by June.

All of our properties will be a part of the Revelers Club, our loyalty program, so you have even more ways to earn and redeem your rewards. We look forward to reveling with you in our new – or newly updated – properties this year!
